Capping honey is honey resulting from the uncapping process, that is, the removal of the thin layer of wax that is used to encapsulate the honey in order to allow its extraction. During this step, honey escapes, as do particles of wax, pollen and propolis.
At La Chope à Miel, we collect this precious honey and put it in a jar without filtering it. We only let it settle to remove the largest particles of wax and any possible debris. The result is a honey that is richer in taste, properties and texture. As a bonus, it is served with a honeycomb for a complete tasting experience!
We now offer the version without honeycomb for those who are less fond of "chewing" the wax ;)
Interesting fact:
The vast majority of beekeepers pass this honey from the uncapping directly into the regular circuit since it falls into a container in the extraction chain, it is often filtered and heated, then pumped into the honey tank with the rest of the honey from the extraction.
